It's grown in the Cerrado region of Minas Gerais, a high-altitude savannah where the climate practically conspires to produce sweet, syrupy beans. The cherries are sun-ripened on the branch until they're loaded with concentrated sugars, then dried whole on patios so all that fruit sweetness soaks right into the bean. The result is a cup with serious body, a syrupy mouthfeel, and that comforting cocoa-and-nut backbone that makes Brazilian coffee a household name for a reason.
